维生素B2(核黄素)的食物来源

维生素B2(核黄素)广泛存在于植物和动物性食物中,动物性食物中核黄素的含量较植物性食物高。动物肝脏、心、肾、乳类及蛋类食物中含量尤为丰富,豆类食物中也较丰富,绿叶蔬菜和野菜中也含有大量的核黄素。
食物的加工、烹调方式对核黄素也有较大影响。维生素B2的最大敌人是光,特别是紫外线,如果用玻璃瓶装牛奶,一天的时间,牛奶中的维生素B2会破坏到几乎是零。另一个敌人是硷性物质,有人为保持蔬菜好看的绿色,烹饪蔬菜时加碱。这样的方法可彻底损失全部的维生素B2。
另外需避免的是水,因为维生素B2可以随水流失。如捞蒸饭中核黄素仅保留50%,而烙饼可保留86%。 煮鸡蛋核黄素可保留97%—99%。
