肉毒中毒　代表食物——发酵食品　肉毒中毒在我国发生率并不高，但是它是一种极为严重的食物中毒，病死率很高，一旦发生中毒往往引起多人死亡。所以，必须高度警惕，严防肉毒中毒发生，万一出现中毒，必须及时送医院救治。

　　引起肉毒中毒的食品多为罐头食品，发酵食品（如臭豆腐、黄豆酱等）以及腐败变质的熟猪肉、猪肝等也能够引起肉毒中毒。

　　症状：肉毒中毒神经症状突出，没有或者只有轻微的胃肠道症状。不发热，发病时患者常感到头痛、晕眩、眼睑下垂、视力模糊、复视；随着病情的发展，出现吞咽困难、说话不清楚等症状。严重患者出现心脏症状，导致心力衰竭及呼吸肌麻痹而死亡。

　　预防：家庭自制的发酵食品、腌腊食品，在制作时必须严格消毒；食用罐头食品时，如发现罐头盖鼓起，色味发生改变，表示该食品已受到细菌污染，已有大量细菌繁殖，此时切勿食用，应立即丢弃。
